Paleo Meatloaf

Ingredients

  • 2 lb grass-fed ground beef (or mixture of 2:1 beef:pork)
  • 1/4 lb chopped bacon
  • 1/2 cup Pamelas/Bob's gluten-free general purpose flour
  • 2 eggs
  • 1/4 cup mustard
  • 2 cloves of garlic
  • 1/2 large red onion
  • 2 cups mushrooms
  • 1/2 cup of grated carrot
  • 1/2 cup of melting cheese (leftover cheese is great! - jack, mozzarella)
  • 1/4 cup parmesan
  • salt & pepper to taste

Instructions

  • Pre-heat oven at 350F
  • Cook bacon in a large frying/sauce pan until starting to brown
  • Add garlic, onions, salt to bacon (& grease) and sauté
  • Once sauté is ready (onions translucent), throw in mushrooms
  • Remove sauté from heat once mushrooms are starting to brown, allow to cool
  • Mix beef, eggs, flour, mustard, carrot, and melting cheese
  • Mix in sauté
  • Put meatloaf mixture in a 9x5loaf pan
  • Sprinkle parmessan to cover the top
  • Cook for 50min-1hr in center rack of oven, until parmessan is golden brown
  • Remove meatloaf from oven and let rest for 10-20min
  • Enjoy!
